Here is the recipe for this delish raw vegan cheesecake i made, just a note that this recipe is in 'cup' measurements, i find it so much easier to measure this way when i'm cooking (you can get cup measures quite affordably in supermarkets!)
Ingredients:
1/2 cups Almonds
1/2 cup Buckwheat
1 cup Cashews
1/2 cup Dates
1/2 cup Frozen berries
1 Frozen Banana
• Soak cashews in water overnight
• For 'biscuit' layer put buckwheat, almonds and dates into the food processor/blender, then pat down into a cake tin, then place in freezer for a couple of hours
• For 'cheese' layer put half of the cashews and the frozen banana and blend until creamy , spread over the 'biscuit' and pop back into the freezer
• Add the other half of cashews and frozen mixed berries (or any frozen fruit) to blender and blend until creamy, then spread over the 'cheese' layer, pop some fruit on top and pop back into the freezer until it holds itself together!
